Chunky, no-sugar, homemade nut granola

Are you looking for an alternative to the conventional store-bought granola, which probably is very high in sugar?


Try making a batch of this easy homemade granola recipe, which can be stored in the fridge for up to 3 weeks, and we promise - it will step up your breakfast game.


INGREDIENTS:

  • 3 cups old fashioned oats (larger, flat flakes)

  • 1/2 cup raw unsalted hazelnuts

  • 1/2 cup raw unsalted almonds

  • 1/2 cup honey or 1/2 cup maple syrup for vegan option

  • 1/4 cup olive oil

  • 1/2 tsp cinnamon

  • pinch of salt

  • 1 tsp vanilla extract

*Option: swap hazelnuts and almonds with any nuts that you like! Just make sure that they are raw and unsalted.



METHOD:


  1. Preheat oven to 160C and line a baking tray with parchment paper.

  2. Add the nuts in a blender and slowly pulse until crushed. DO NOT over blend, you want the nuts to break in smaller pieces not crushed completely, this ensures that your granola stays crunchy! DO NOT add the nuts in the blender all at once. Blend in small batches.

  3. In a large bowl, using a wooden spoon mix the oats with the hazelnuts, almonds, cinnamon, and salt.

  4. In a smaller bowl combine oil, honey and vanilla. Once incorporated pour the mixture in the larger bowl with the oats and nuts.

  5. Pour the granola onto the lined baking tray. Spread it EVENLY on the tray and pat down lightly to avoid any gaps.

  6. Bake for 25-28 minutes until top layer browns.

  7. Remove from oven and allow it to cool COMPLETELY.

  8. Break into pieces with your hands, place in an airtight container and store in the cool dry place for a week or in the fridge for up to 3 weeks.


Enjoy your granola with yogurt or milk of your choice. Try adding different ingredients to your bowl like, fresh or dried fruit, chia seeds or coconut flakes.
