Baked Chicken with Pesto and Feta

  • 4 boneless, skinless chicken breasts

  • Herbs, salt, freshly ground black pepper for seasoning

  • 120ml homemade pesto or organic store-bought pesto

  • 100g crumbled feta cheese


  1. Preheat your oven to 190°C.

  2. Remove visible fat and tendons from the chicken breasts, and cut each breast into strips.

  3. Marinade the chicken with the herbs, salt and pepper and mix in 2/3 of the pesto.

  4. Lay the chicken strips in an oven-safe dish and spread the rest of your pesto over the chicken strips.

  5. Cover the baking dish with aluminium foil and bake in the preheated oven for 25-30 minutes until the chicken is just cooked through.

  6. Remove the foil and sprinkle the chicken with the crumbled feta cheese.

  7. Return the dish to the oven and bake for an additional 5 minutes, until the cheese is melted.

  8. Serve with basmati rice or quinoa and enjoy!
