Ingredients:

  • 2 cucumbers, chopped

  • 1 tomato, chopped

  • 1/2 onion, finely chopped

  • 1 cup fine brown lentils

  • 2 bay leaves

  • Salt and pepper, to taste

  • Super nut mix of your choice (e.g., seed mix)

  • 1-2 tablespoons extra virgin olive oil

  • A drizzle of balsamic cream

  • Dried herbs (e.g., oregano, thyme) to taste

  • Feta cheese (or dairy-free feta for a vegan option)


Method:

  1. Start by cooking the lentils according to the package instructions. Place the lentils in a pot, add a couple of bay leaves, and season with salt and pepper. Cook until the lentils are tender but not mushy, typically for about 20-25 minutes. Drain any excess liquid and remove the bay leaves.

  2. Once the lentils are cooked, rinse them under cold water to stop the cooking process. This will also help cool them down.

  3. In a large mixing bowl, combine the cooled lentils, chopped cucumbers, halved baby tomatoes, and finely chopped onion. Mix them together.

  4. Add a generous handful of your chosen super nut mix (such as a seed mix) to the bowl. This will add a delightful crunch and nutrition to your salad.

  5. Drizzle 1-2 tablespoons of extra virgin olive oil over the salad.

  6. Add a drizzle of balsamic cream for a sweet and tangy kick.

  7. Season the salad with dried herbs like oregano and thyme. Sprinkle salt and pepper to taste. Remember that feta cheese, if used, will also contribute some saltiness, so be mindful of your salt levels.

  8. Finally, top off your salad with crumbled feta cheese or dairy-free feta for a vegan option.

  9. Toss all the ingredients gently to combine everything evenly.
